Memorial Day is a day for for remembering those who passed away while serving in the United States Military. It should not be confused with Veterans Day, which celebrates the service of all military veterans. The holiday is currently celebrated on the last Monday in May and is considered the unofficial start of summer, while Labor Day is considered the end of summer.
As a military wife for 28 years, I ask that you please take some time this Memorial Day to honor fallen soldiers. Take some flowers to a local veterans cemetery, visit the spouse of a dead military member, or take a few minutes to say a prayer for our country. Ok now some simple delicious recipes, for the get together, from my personal cookbook.
Easy Oven Baked Bar-B-Q Ribs
- 2 racks baby back ribs
- 1 bottle Zesty Italian Salad dressing
- 1 bottle Hickory BBQ Sauce
- Marinate Ribs overnight in Italian Dressing
- Place Ribs in oven proof pan coat with BBQ Sauce
- Cover with foil and bake at 275* for 3 hours or until ribs are falling off the bone.
- Serve with additional BBQ Sauce
Uncle Dewey’s Potato Casserole
- 32 oz frozen hash browns (thawed)
- 1/2 c butter melted
- 1 c onion (chopped)
- 1 can cream of mushroom soup
- 1 c shredded cheddar cheese
- 2 c crushed cornflakes
- 2 Tbsp butter (melted)
- Mix Hash browns, onion, 1/2 c butter, sour cream, soup, and cheese.
- Put in a 9×13 Pyrex pan, top with cornflakes and drizzle 2 T butter over top. Cover and refrigerate for 8 hours then bake at 350* for 1 hour.
7 Layer Salad
- Lettuce (shredded)
- Green onions (diced)
- Water Chestnuts (diced)
- English peas (can, drained)
- Celery (diced)
- 1c light Mayonnaise
- 1/4 c sugar
- 1 c graded cheddar cheese
- Bacon Bits
In large salad bowl layer ingredients in order, mix Mayo and sugar and spread on top, top with cheese and bacon bits
Miss. Kay’s Double Chocolate Chip Cookies
- 1 German Chocolate Cake mix
- 1/2 c oatmeal
- 1/2 c melted butter
- 1 c chocolate chips
- 1 c chopped pecans or walnuts
- 2 eggs
Mix all ingredients, drop by teaspoon on cookie sheet, bake for 10 minutes at 350*
I know these recipes aren’t healthy, but on holidays it’s ok to splurge a little. Especially if you, like me, have wonderful memories associated with special holiday recipes. Enjoy your holiday!! God Bless America!!
